1 – 15 ounce can black beans
1 – 15 ounce can yellow corn
1/4 red onion, diced
1/2 green bell pepper, diced
1/2 pint cherry tomatoes, diced
1 avocado, diced
1 lime, juiced
Cilantro, to taste
Salt and pepper, to taste
1) Rinse and drain beans and corn in cool water. Combine with onion, bell pepper, cherry tomatoes, and avocado in a large bowl and mix gently.
2) Add lime juice, cilantro, and salt and pepper to taste. Cover and refrigerate for 20 minutes before serving to allow flavors to marry. Enjoy!
