Best Tasting Pancakes Ever! Vegan or Otherwise
What you need:
1 teaspoon vanilla
1 egg replacer (http://vegweb.com/index.php?topic=7678.0)
1 cup nondairy milk (I use soy)
2 tablespoons vegetable oil
1 cup white all purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons sugar
What you do:
1. Mix wet ingredients in a medium sized bowl. Mix dry ingredients in a larger bowl.
2. Pour wet ingredients into dry; mix well until smooth consistency.
3. Drop ladlesful onto medium heat (preheated) pan. Flip over when each pancake begins to bubble on top.
Serve with vegan buttery spread (if desired) and maple syrup.'

The trick to keeping them fluffy is to flip them when only a few bubbles have formed. Keep that air trapped! I also upped the baking powder, which seemed to help. The applesauce makes them a bit heavy, so I might try less than the standard 1/4c I use when replacing eggs. The applesauce has a lot of natural sweetness, so I'll cut down the sugar next time.
Overall, GREAT recipe! Actually tastes like pancakes! :)

This recipe is so simple and delicious. I used a banana as the egg replacer and added a ton of cinnamon to the dry ingredients. It was so fluffy and tasted as good as it smelled.
These are fantastic! Used half a banana for the egg and applesauce for the oil. Perfect!
So tasty, we frequently make these for dinner and freeze the extras for a quick weekday breakfast. I use whole grain milk instead of soy milk and add mini chocolate chips. My go-to pancake recipe. I will be experimenting with egg substitutes.
Really Good! I used whole wheat flour and applesauce for the egg. I also added vanilla, apple slices (when they set in the pan) and some ginger=awesome combo. Topped with chocolate sauce, almond butter and honey. The almond butter and honey was the best combo I would skip chocolate but worth a try. ;)b

Third time's the charm! I had no luck with flax or banana as the egg substitute, ending up with a gelatinous mass instead of something fluffy and pancake like. On my next try, I upped the baking powder to 1 tablespoon, and used EnerG for the egg. Success! It was fantastic.
My family absolutely loves these pancakes. I found the recipe back in October, shortly after we went Vegan. I have tried a few others and always return to this recipe. I usually add blueberries or blackberries.
