The Best Real Peanut Butter Cookies!

What you need: 

1 1/4 cups firmly packed light brown sugar
3/4 cup smooth peanut butter (I use Smart Balance)
1/4 cup vegan butter (I use Smart Balance light)
1/4 cup vegetable shortening
1 heaping tablespoon unsweetened applesauce
1 3/4 cups unbleached all-purpose flour
2 tablespoons vanilla
3/4 teaspoon baking soda
3/4 teaspoon salt

What you do: 

1. Preheat oven to 375 degrees F. Mix your brown sugar, peanut butter, margarine, and shortening in a large mixing bowl either by hand or with an electric mixer, until smooth.
2. Add in the applesauce, and mix again. Next, put in flour, vanilla, baking soda and salt. Mix until well blended.
3. Take a rounded teaspoon and spoon onto a cookie sheet (I put wax paper over what I am cooking on) and use a fork, pressing once on each side of the cookie to get the nice fork lines in it.
4. Bake for 8 to 10 minutes, depending on your oven. Be careful not to overbake. It is important to let them cool for several minutes before attempting to take off of the sheet, it gives them time to harden.

Source of recipe: I have tried many vegan peanut butter cookies and have not been satisfied. I finally made my own recipe after having a huge craving for them, and came out with this one, which tastes wonderful. I hope you all like it as much as I did!

SO HOW'D IT GO?

Great texture. I used 1 tbs cornstarch plus 1 tbs water instead of apple sauce. I thought I would use almond extract instead of vanilla extract. Big mistake, the cookies tasted like cherry cola LOL! I will definatly make these again but put 1 tbs vanilla extract, 2 tbs of any extract seemed like a bit much.

These are AWESOME!

I made these because I have a friend who thinks she might want to become a vegan, and she loved these.

I made them pretty much exactly by the recipe, but I used all Earth Balance, and cinnamon apple sauce.

My father ate everything that my friends didn't. I didn't tell him they were vegan, and he never knew. Thank you so much for posting this; my family is full of peanut-butter-aholics that will never knew what hit them with these cookies.

I just made these! I didn't have any applesauce or baking soda, so I just didn't add the applesauce and I put in a tsp of baking powder instead of baking soda I also used 1 cup whiteflour and 3/4 cup wholewheatflour and only used 3/4 cup brown sugar. These are so yummy!  :)

My children (6 & 8) made these tonight. They just put all the ingredients in a bowl and mixed it up. We were all out of vanilla, so we substituted almond extract (and we only used 1 tablespoon instead of two because that seemed like a lot). Anyway, the kids loved them (cooked and uncooked). I thought they were really yummy too, but sweeeeeeeet. Thanks for the recipe.

WOW!!!!!

These really are the BEST REAL pb cookies!!!! so amazing thank you for the recipe!!

I did use all earthbalance shortening instead of the mixture of butter/shortening
I added cinnamon (i add it to everything lol)
I used organic granulated sugar instead of brown sugar
and i wisked all dry ingredients, then added it to the wet mixture.

Thanks to you i will be making these all holiday season for my friends :D

These are definitely the best. I'm making them for the second time in a week right now. I added extra Earth Balance; made them even creamier...

I made some big modifications to this recipe so that might be it
but I only got about 15 cookies out of this recipe.  Otherwise very yummy. Crispy edges, soft middle. With my changes I didn't need to press the cookies, they spread on their own.

I used:
1/4 c earth balence
1/4 c flax seed meal
3/4 c Maranatha chunky PB
1 1/4 c sucanat
1 tsp vanilla
2 T molassas
1 "egg" (Ener-G replacer)
1 1/4 c whole wheat flour
3/4 tsp baking soda
3/4 tsp sea salt
1 T vanilla soymilk (at the end, batter was a little dry from the flax maybe)

yum yum yum!! I did not have choc chips as I would have liked, but shaved some baking chocolate into the dough and the sweetness of the cookie offset the bitter taste.

Yummy recipe!

For those "natural" peanut butter folks, it works just fine in this recipe. I used about 1/2 cup creamy natural peanut butter, and 1/4 cup chunky. I cut the sugar down to a little less than 1 cup and used 1 cup white flour and 3/4 cup whole wheat flour.

Thanks for the recipe! They satisfied my craving!. This recipe made 30 mini cookies (about 1 1/2" in diameter).

I also have been adding vegan chocolate chunks to them. Very yummy!
