The Best Lentils and Rice

What you need: 

2 Cups Brown Rice
1/2 cup lentils
5 cups water
I large onion, chopped
2 Carrots, chopped
2 - 3 cloves garlic, minced
1 vegetable boulion cube
black pepper
dash of cayenne (optional)
bay leaf

What you do: 

Bring the rice, lentils, onion, carrot, and garlic to a boil in 5 cups water. Reduce heat to low and add spice and bay leaf. Cover and simmer over low heat for about 45 minutes. Serve with tamari sauce. I like to also top it with sliced scallions and/or toasted pecans.
(Be sure to remove the bay leaf when finishe'd cooking)

SO HOW'D IT GO?

Thank you for this yummy recipe!
I made it last night, and it was delicious. Everything cooked perfectly and the flavor was awesome. The only thing I added was some chopped celery because I had it to use up.

Delicious, I substituted one cup of Orzo pasta for the brown rice which I added a few minutes before the dish was finnished. I also skipped the onion. Thanks.
