Best Ever Potato Soup

What you need: 

6 small gold potatoes
1 medium onion
3-4 stalks celery w/leaves
2 cans vegetarian vegetable broth (give or take)
1-1/2 tablespoons vegetarian butter
1-1/2 cups soy milk
1-2 tablespoons 807]cornstarch
1-2 tablespoons cold water for thickener
1 vegetarian chicken bouillon (vegan kind)
bacon flavored bits to your taste
salt & pepper to taste

What you do: 

Cut potatoes into small cubes (cooks faster). Cover with vegetable broth and cook until tender.
Chop onion and celery and saute' in butter until tender.
Heat soy milk and bouillon in a saucepan, stirring until bouillon dissolves. Don’t boil or scald, just warm it. Mix starch and water until smooth.
Add starch mixture to soy milk, stirring constantly until thickens to desired consistency. Combine your vegetable mixture, soy milk mixture, and bacon bits into big pan with your potatoes and broth.
Using a hand mixer, mix to desired lumpiness. Add the other 1/2 can of broth if needed until it reaches desired texture.
Salt & pepper to your liking. Enjoy!

SO HOW'D IT GO?

. I didn't have any vegan chicken bouillons on hand so I replaced that with vegetable soup seasoning. I used plain soy milk (instead of the almond milk) and it came out fine. I only had a small bowl with a dinner roll and it kept me (and my family) full all night.

Oh my, this is a yummy yummy soup.  I used a mix of baby gold, red, and purple potatoes, lots of carrots, onion, and garlic.  I just let all the veggies cook together, instead of sauteing some and adding them separate. This was awesome and creamy and delicious!  A keeper for sure!  =)

Yeah so I used carrots instead of leeks.. turns out they don't fry 'til tender very easy.. So they were kinda hard. But other than that it was amazingly scrumptious! Next time I'll just add the veggies to the potatoes and boil them, too.  :)>>>

Soooo good! I did use chik'n and I think it was fab but you certainly dont have to, I also used green beans instead of celery (its what I had on hand) and it was awesome def keeping this recipe on hand!!

i used a bunch of misc. baby potatoes from my farmers market, and rice milk instead of soy.  I also added carrots and garlic.  It was sooo tasty!  I also use instant mashed potatoes flakes instead of cornstarch to thicken my potato soup. It always wourks nicely, and you don't have to heat the milk separate/add the bouillon, then the cornstarch, etc.  You can just pour it right in til it's thick!. Just look for a vegan version, some have milk in them.  Mine is just an off brand.

THis was greeeeeeat! i added carrots as well... mmmmmmmmm great recipe! the bacon bits gave it even more flavor! TRY THIS!  ;)

This looks scrumptious! How big were the cans of veg broth you used?

I used a box of Trader Joe's vegetable broth, and added about 2/3 cup of water. :)

Soooo yummy and filling. Added three cloves of garlic (what can I say, I love garlic!) and sauteed them with the onions and celery, a tiny bit of chili powder, tons of salt and pepper, and a few squirts of Bragg Liquid Aminos.
