The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

SO HOW'D IT GO?

Dear little2ant, thank you soooo much for this, you have just ensured I will never eat eggs or cheese again! I am a new vegan and for a couple years eggs and cheese were the main reason I struggled to cross the line.  I love the finish dish but must say that cheese sauce is something else, so easy, I will be using it with all kinds Smile

this really was the best, i didn't put enough margarine cause i thought it was teaspoons, but even though i did half the cheese recipe i have left overs and I'm so excited!
i was hesitant at first because sometimes cooking tofu, it doesn't always come out tasty, but i ate this up in no time!
i added tomatoes and spinach and cayenne pepper as well, omg,
this recipe was, amazing!
everyone really needs to try this!

I have made this recipe several times, and it is always delicious. My husband is having a hard time giving up eggs, so it's great that he enjoys eating this dish. I love that the 'cheeze sauce' recipe makes extra--we always have some in the fridge so we can whip up some scrambled tofu a bit more quickly.

It felt like I was eating eggs but I had no guilt! ;) I halfed the cheeze sauce and will use the other half to make this scramble again this evening as it was so delicious. I did not use turmeric but I used basil instead and I also used mushrooms, tomatoes, a yellow bell pepper instead of a green one and spinach. I used medium firm tofu instead of extra firm and it turned out just fine. Thanks for posting this recipe!

This is SO AWESOME!  I can't believe I've never thought to add cheesey sauce to scrambled tofu before!  It's totally brilliant.  Thanks so much.  I've been a fan of this particular sauce recipe for a while - love the enchiladas.  To the tofu scramble, I added mushrooms, and right before I served it, I added fresh shredded carrots.  It was off the hook!  Wow.  I am SO happy, so is my tummy, and so is my HUSBAND!  :D

OMG!!  This was delicious!!  I didn't read the reviews first that said to make less sauce, but I will find yummy things to put this sauce on!  I had this dish with roasted potatoes. :)

Update: made this for a non-vegan guest we had sleeping at our house and he didn't even notice they weren't real eggs... my husband told him and he was very surprised. He ate everything on his plate. Hubby said to make this every time we have guests b/c it's yummy yummy and easy :)

Just made this and thought it was wonderful! I only made 1/2 the cheese sauce and still didn't use all of it. I also had enough left over for breakfast tomorrow for me and my son. I had it over toast with some tomatoes on the side. Delicious!

I make a lot of scrambles... but this cheese sauce was SO GOOD with it. I don't know why I never thought to add a nutritional yeast sauce to ANY scramble! Also, adding mustard to it? I would have never thought of that either, but it works wonderfully!! I browned my veggies a little bit more than I probably should (trying to cook the tofu longer...), so my end product wasn't as pretty as some of the pictures, but it still tastes AMAZING!
