The Best Breakfast Scramble Ever!

What you need: 

Cheez sauce:
1/2 cup flour
1/2 cup nutritional yeast
1 teaspoon garlic powder
2 cups water
1 teaspoon yellow mustard
4 tablespoons vegan margarine (I use Earth Balance) Stir fry:
1/2 onion, chopped
1/2 green pepper, chopped
cooking oil, as needed
1 pound extra firm tofu, drained and crumbled (not silken style)
pinch turmeric, optional
salt and pepper, to taste

What you do: 

1. For cheez sauce, mix first 3 ingredients together in sauce pan. Add water and mix thoroughly. Heat on medium until thick and bubbly. Remove from heat and add mustard and margarine. Set aside.
2. For stir fry, saute onion and green pepper in oil. When they are good and soft, move them to the sides of the pan and form an empty circle in the middle for your tofu.
3. Add more oil to the middle of the pan, then add your drained, crumbled tofu. When it starts to get golden, mix in the peppers and onion and keep frying. You can add some turmeric for color, if you like.
4. When it looks like you could eat it, add the cheez sauce and mix it all in to coat, until that becomes golden brown too. I saute this for another couple of minutes. You might not need all of the sauce. I save the leftovers for pizza or nachos. Add salt and pepper to taste (this makes all the difference!).
Eat! This is soooo good and it’s great on toast or English muffins (I use Matthew's brand). I don't miss eggs at all after discovering this!

SO HOW'D IT GO?

Wow, I made this recipe again this weekend and it turned out even better than the first time.  My mom wouldn't eat it at first thinking that its real eggs I cooked.  She's a vegetarian.  I convinced her thats its tofu.  She really loved it.  I have to show her how its made, she wants to make it for my dad now.  Thanks for this great recipe.  How did you come up with such a great recipe that recplaces real eggs?

Wow, this was so good!  I love this cheese sauce, but I like to use a little more NY than what is called for.  I made this this morning for breakfast with banana bread on the side.  (I actually started getting up a 1/2 hour earlier just to cook breakfast, there is nothing that starts the day better than a delicious fresh cooked breakfast). Wow, what a delicious breakfast.  Definately in my "keep" recipie file to use again.  This will be a staple from now on.  And this cheese sauce is good to have on hand becuase it is good on a lot of other things too.

I agree with everyone -- this was absolutely delicious!  I can't wait to make it for other people!  I only spooned on a little bit of the cheese sauce, like everyone suggested, and that was all it needed.  I also added spinach, black beans, and tomato!  I had it with a slice of honey whole wheat toast, and I was in breakfast heaven.

This is making it easy to say goodbye to eggs!

I was wondering, when it says "mustard"- do you mean like the liquid kind you get in a bottle for hot dogs? Or is there some powdered concentrated kind that Ive over looked?

Yummy! I made this for breakfast today and it was great. I did add some freshly diced jalapeno (because I needed to use it) and doused some tamari and extra nutritional yeast on the tofu after it had browned a  bit. I took your suggestion and had a Matthew's whole wheat english muffin with it and add some sliced tomato on the side. I'll be eating the leftovers tomorrow for breakfast. I halved the recipe and still have some of the sauce left. I'll use it for something!

Good thing I asked before I started trying the recipe.  Thanks  to all of you that answered my question.  I really appreciate it.  I will go and buy the real mustard that the recipe calls for.  Yes there are lots of health food stores here, I will phone around first to confirm if they have it.  Thanks again, I will post my results about how the recipe turned out.
