The Best and Easiest Peanut Butter Chocolate Chip Cookies

What you need: 

1 cup sugar
1 cup peanut butter
1 teaspoon baking soda
3 ounces applesauce
1/2 cup flour
1 cup chocolate chips

What you do: 

1. Preheat oven to 350 degrees Fahrenheit. In the bowl of a stand mixer, cream together sugar and peanut butter until well combined.
2. Add baking soda and mix. Then add in applesauce and mix until combined. With mixer running, add in flour until the mixture forms a doughy, almost dry, texture. Turn off mixer and fold in chocolate chips.
3. Roll into 1" balls and flatten slightly. Place onto ungreased cookie sheet (I have a really good cookie sheet so you may want to use some parchment). I usually fit 12 on the sheet in 4 rows of 3.
4. Bake for 16 minutes. Cookies will be golden brown and appear very soft. Let cool for a few minutes before removing them from the cookie sheets.
They do harden up a bit, trust me, and they are delicious. My extremely picky 2 year old will eat these!
Source of recipe: I made this recipe up when I was having trouble finding a vegan peanut butter cookie recipe that worked. Needless to say, I ended up making these every day for over a week! No joke! They are a must try and never last long enough for a picture. I'm sure you could make these easily by hand but I used a stand mixer.

SO HOW'D IT GO?

This recipe popped up when I was searching for a recipe that didn't use boatloads of unhealthy and expensive vegan margarine. I was skeptical because the dough looked quite greasy but these are a winner. Thanks very much.

These ARE the Best cookies i've made in a Long long time!! hands down. they're up there with veganomicon cookies. so easy and delisciously gooey in just the right way. if you have problems with this recipe it's because you messed up and for no other reason. i followed it, they came out fabulous! :)

A decent cookie but a little crumbly even though I only put them in the oven for 12 minutes. Next time I'm gonna use 1/2 white and 1/2 brown sugar. Other than that, really awesome, simple recipe.

this cookies are wonderful.  I substituted peanut butter for sunflower butter (my 3-year old is allergic ) I put them in the oven for 15 minutes but less it would have been even better.  thanks for the recipe!

Holy shit, these were amazing!  For the sugar I used half a cup of granulated and half a cup of packed, dark brown sugar.  I used two ounces of natural apple sauce and a little bit of some vanilla soymilk.  I only cooked them on 350 for ten minutes (I have an extra thermometer, so the temperature is accuarate), and I cannot imagine cooking them for any longer.  They came out perfect when warm and even better after they cooled off.

Just wanted to add that if you can get your hands on vegan white chocolate chips they are even better!  For some reason the white chocolate really complements the peanut butter!  ;)b

I made these today, and agree if you use a natural PB you get a pretty oily dough.  I made half with Ch Chips and half without.  The ones with CC are more pliable and the dough sticks together better.  Once you add the CC the dough sort of falls apart and turns into little crumbles.  You can still roll it into a ball and press it with a fork, but it takes a bit more effort with the CC in them.  The dough is delicious.  I cooked mine at 350 for about 13 minutes and that was plenty. 

I did make a few changes.  I used All Natural PB, and about 1/2 c. heaping measuring of Sucanat, & for the flour I used 1/2 c. Brown Rice Flour with 1T Soy flour in the bottom of the measuring cup, and 4oz. Natural Granny Smith Applesauce.  These are sooooo deeelish!!  And super duper easy!!
