Basic Black Bean Stew

What you need: 

3/4 cup carrots, diced small
3/4 cup potatoes, diced small
1/2 cup green peas
1/2 cup corn
16 ounces tomato juice
1 cup vegetable broth
1 cup water
16 ounces black beans
3/4 cup vegan meat crumbles, thawed
3 tablespoons olive oil
1/2 teaspoon baking soda
oregano, to taste
garlic, minced, to taste
salt and pepper, to taste

What you do: 

1. Add vegetables to pot, and fill up with the tomato juice, vegetable broth and water. Add more if you want a thinner soup.
2. Add beans, crumbles, olive oil, and baking soda. Place on the stove and slow cook on medium low. While the soup slowly cooks, you can add your seasonings to enhance the taste of the soup to suit you desires.
3. Stir frequently and ensure all vegetables are cooked thoroughly before you serve.
