Baked Potato Fiesta

What you need: 

2 large or 4 small russet potatoes
1 can black beans
fresh or frozen corn (Trader Joes frozen roasted corn is great in this)
1 tomato, seeded and diced
1/2 cup fresh cilantro
1 small onion
garlic, minced or chopped
pinch of salt
pinch of sugar

What you do: 

Slice potatoes with skins lengthwise, and bake until desired doneness.
While potatoes are baking, in a large skillet sauté onion for several minutes.
Add remaining ingredients and heat until heated through.
Serve over potatoes and enjoy!
You can go to town with this recipe and embellish with all kinds of ingredients. Its all to taste so vary as you wish but the cilantro makes this dish so add as much as you like. Its quick and easy and delish.

SO HOW'D IT GO?

Really tasty/cheap!  I used a can of diced tomatoes instead of fresh because i had it on hand, i added chipotle tabasco sauce, & i omitted cilantro (sorry, i hate it! haha).  really good, filling, & lasted for a few meals!
