Baked Dutch Apple Pancake

What you need: 

1/3 cup maple syrup (I used low calorie pancake syrup)
1/4 cup brown sugar
3 tablespoons vegan margarine
2 apples, thinly sliced (I leave the skin on)
1 Ener G egg replacer
3/4 cup nondairy milk (I use soy)
1/3 cup applesauce
1 tablespoon vegan margarine, melted
1 1/4 cups flour (I used whole wheat pastry flour)
4 tablespoons sugar
2 teaspoons baking powder
1/4 teaspoon salt

What you do: 

1. Preheat oven to 400 degrees F. Combine maple syrup, brown sugar, and margarine in a 9" round baking pan.
2. Put in the oven for about 5 minutes, until the butter melts. Remove and stir to dissolve the sugar. Arrange apple slices, overlapping, over the syrup mixture in the pan. Set aside.
3. Whisk together the egg replacer, milk, applesauce and melted margarine. In a medium bowl, combine flour, sugar, baking powder and salt.
4. Pour in the milk mixture and stir until smooth. Pour batter over the apples. Bake for 20 to 25 minutes. Remove from oven and turn out onto a serving plate.

SO HOW'D IT GO?

It was very delicious.  Incredibly sweet, though, so if you can't handle sugar in the AM, maybe try it for dessert, instead.  I also thought it would've been good with some cinnamon!  My only mods were to use 1 cup water instead of soy milk and egg replacer.  (I thought the egg replacer was somewhat redundant when there was already 1/3 cup applesauce, and I never use soy milk in pancake batter, water's cheaper and fewer calories!)  Turned out great!  I would've took a pic, but I didn't loosen the edges before turning it out. :( Oh well, next time!  Thanks very much.

This was soooooooooooooo good! My husband and I ate the whole thing.  I am pregnant and craving alot of sweet things so Imade this for breakfast and it was a delight.  Next time I will make two so the children can get some.  My two year old didnt care for it.

This is fantastic! It really taste's pancake-like to me (probably because i cut down on the sugar a bit - only 3 tbsp of sugar in the batter and cut down maple syrup to 1/4th cup). I'm not very fond of wheat, so i subbed 3/4 cup Rye Flour and 1/4 cup brown rice flour, and also added 1 tbsp more applesauce. Delicious treat to have a slice of for breakfast - and even better cold with tea later in the day  :) I highly recommend this to people who love apples.

i just made this for my brother and his friend ryan - and... i don't think i'm going to get to post a picture because it's about to be all gone!!! anyway, i didn't use soymilk, just water, and i put a little extra applesauce just because. it turned out beautifully.

This turned out ok. I think I had my hope set a little to high! It is definetly a dessert though. It was so sweet. My husband said it tasted like apple pie. Believe it or not my 2 year old wouldn't go near it! I gave it 4 stars simply because it is fairly effortless and if you have a sweet tooth it hits the spot!
Oh yeah I forget to add the cinnamon before hand so i just lightly sprinkled it on top before I served it!

so i live with my sister and my 12 year old neice, well my neice had some friends over for a sleepover and i thought this would be the perfect breakfast for everyone involved... and it sure was!  i one and a halfed the recipe and added lots of cinnamon, everyone was stuffed!  i'll surely make it again, many many many thanks for the recipe!

I used sucunat instead of sugar, and added one additional apple for a total of three.

This dish was delicious! I don't know if I'd eat it guilt-free for breakfast, though...it has the ability to be a dessert for sure.

It's great re-heated the next day, too!

Awesome recipe!  I used part of a banana and a little more apple sauce instead of the EnerG.  I also used real maple syrup and it was really sweet, which was fine with me.

I made a few alterations. I used 100% apple juice instead of the 4 tablespoons of sugar and oil instead of the egg replacer so it ended up falling apart when I tried to flip it. Oh well! It's just for me anyway and it tasted like HEAVEN!  :o I think I can die happy now.  :P
