Badass Stuffed Bells

What you need: 

4 bell peppers cut in half

1 package soyrizo

2 cups or so quinoa or any type of rice( leftover rice is always good eats)

1 can tomatoes (diced or whatever)

7 mushrooms, chopped

4 garlic cloves (never too much garlic)

1 large onion

2 small jalapenos or so

2 cups vegan shredded cheese

olive oil

chili powder

whatever else is in your fridge/spice cabinet that sounds good...be creative!

 

 

 

What you do: 

cook rice with the can of tomatoes, substitute 1 cup water with the can( ie. mexirice)

preheat oven to 350

put bells in pan face down with a 1/4 inch of water...cover n cook for about 10 minutes or so til tender

saute onions and garlic on high in olive oil til translucent and add awesome seasonings

add jalapenos/ mushrooms and soyrizo and saute til soyrizo is golden brown or you think its good

add rice mixture to the saute pan in the proportions that seem badass to you personally

check the flavor, add hotsauce or whatever seems right...cooking is an art!

add your rice/soyrizo mixture to the bellpeppers in heaping spoonfuls

sprinkle the proper amount of cheese down

put it in the oven and set timer for 15 minutes

crack a beer

take it out of the oven

eat yummylicious food!

also you can use chkn' cutlets/veggie crumbles instead of soyrizo...a fun garnish is cilantro and avocado
