Awesome Vegan Chow Mein

What you need:

1 - 14 oz bag refrigerated chow mein noodles (already cooked, just need to heat up)
1/2 cup teriyaki sauce (I use Soy Vay Veri Veri brand)
vegetables of choice, fresh or frozen
prepared seitan, cut into small chunks (I used an 8 oz package)
1/4 cup water
sesame seeds, optional (garnish)
olive oil
1 tablespoon cornstarch mixed with 2 tablespoons water

What you do:

I'm not trying to claim this is authentic Chinese food or that my measurements are perfect... but this tastes really good!
1. Fry seitan in olive oil until lightly browned. Add veggies of choice (I used frozen broccoli, snap peas, green onions, and shredded carrots). Cooking times may vary with your veggies so be sure to cook the ones that take the longest first and add frozen/quickly cooking veggies last. Take off heat and put aside when your veggies are done cooking.
2. In a large pot, wok, or pan heat up the noodles with olive oil, teriyaki sauce, and water for a few minutes, stirring constantly until heated.
3. Add the seitan/veggie mixture to the noodles and stir for one minute. Add the cornstarch/water mixture, mix some more until sauce thickens and your noodles are hot.
Top with sesame seeds to garnish. Enjoy!

SO HOW'D IT GO?

Delicious. Enough said.
I used Kikkoman's teriyaki sauce and it was bomb!
I reviewed your recipe on my blog here:

I will be making this again!

This turned out kind of sweet (probably because of the type of sauce we used) but we added some soy sauce and some Chinese hot sauce and it was perfect! Thanks for the recipe.

I make a dish just like this!  It's super yummy.  Only thing I do differently is I use regular whole wheat noodles that I cook.  I use the Soy Vay, too (no MSG!).  It's the best teriyaki I've ever tasted.  I make this with sauteed zucchini, onions, mushrooms, and green peppers (and fresh steamed broccoli).  Your non-veg friends will love this, too.
