Avocado Pasta
1/2 (16-ounce) package Kamut penne, or any other whole grain pasta, cooked and drained
1 cup sprouts or a leafy green
2 tablespoons olive oil
2 tablespoon fresh chives or green onion, chopped
2 tablespoon fresh mint, chopped
1 tablespoon nutritional yeast (optional)
2 cloves garlic, pressed
1 lime, zested and juiced
pinch salt
pinch pepper
1 avocado, sliced
1. Cook pasta according to package directions. Drain, then return it to the pot.
2. Stir in the sprouts, olive oil, chives, mint, nutritional yeast, garlic, lime zest, lime juice, salt, and pepper.
3. Serve the pasta topped with sliced avocado and some freshly ground pepper.

SO HOW'D IT GO?
Okay, I haven't made this yet, but I totally do not get the addition of MINT in this recipe. All the other ingredients make sense, but the mint...? Can someone explain how that flavor fits in with the others? It seems to stick out like a sore thumb to me. ???
