Asian "Chicken" Stir-Fry

What you need: 

1 tablespoon toasted sesame oil
2-4 vegan chick cutlets
1/2 bag frozen green beans
1/2 cup raw carrots
1 head broccoli
1 can bamboo shoots
1 can water chestnuts
1 box basmati rice
spicy teriyaki marinade/sauce of your choice
sesame seeds (optional)

What you do: 

Make the basmati rice according to directions on the box. While rice is cooking, cut the broccoli into florets.
Steam the green beans, broccoli, and carrots. Steam depending on how soft you like your vegetables. Heat up the chicken cutlets in the microwave. When finished, cut chick cutlets into thin strips and then cut those strips in half.
Set the cooked rice aside in a bowl and put a large stir-fry pan on the stove. Put sesame oil in pan and heat on med. Empty bamboo shoots and water chestnuts into pan and cook for a few minutes on high. Add steamed green beans, broccoli, carrots and the chick cutlets into the mix. Pour as much spicy marinade in as you like and sprinkle sesame seeds (if desired). Mix it all together and fry on high heat for 5-10 minutes.
Serve on rice! My boyfriend LOVES this recipe and asks for it all the time!
