Applesauce Spice Cake
1/2 cup molasses
1 cup applesauce
1 teaspoon cinnamon
1/2 teaspoon cloves
1 teaspoon baking powder
1/2 teaspoon baking soda
1 3/4 cups flour (I use whole wheat pastry flour)
2 teaspoons ginger, optional
1. Preheat oven to 350 degrees F, and spray an 8x8" pan with nonstick spray. Combine the molasses and applesauce in a large bowl.
2. Combine remaining ingredients and stir into the liquid. If the batter seems very dry, add a little more applesauce or a little water.
3. Bake in prepared pan for 30-45 minutes, or until it tests done.
The optional ginger makes an acceptable gingerbread. I have also had success leaving out the ginger and adding 3 or 4 tablespoons of cocoa to make a tasty, but not very sweet or rich chocolate cake. If you use cocoa, you might need to add extra sweetening, but that depends on your taste.'
SO HOW'D IT GO?
I would rate this 4 to 4.5 out of 5. I used allspice instead of cloves (since that is what I could find) and I only put in one teaspoon of ginger. This cake/bread did a great job holding together and rose nicely. I also sprinkled the top with a little sugar. Such a nice cake to make when you are pillaging your pantry trying to find something just a little sweet to bake. I imagine it would lend itself nicely to icing, but does well all by itself. A EASY AND TASTY FROSTING IS 1 CUP PEANUT BUTTER AND 1 CUP CAROB OR CHOCOLATE CHIPS MELTED 1 MINUTE IN THE MICROWAVE AND STIRRED. IF YOU WANT TO GET REALLY BRAVE AND DON'T CARE ABOUT SUGAR CONTENT, ADD A CAN OF PIE CHERRIES AND MIX GENTLY WITH PEANUT BUTTER/CAROB MIX, OR PUT ON CAKE AFTER FROSTING. EVEN WORKS ON CARROT CAKE.
I think I must have made a mistake making this because everyone else seems to think this cake is really good. This was not edible when I made it. I couldn't even take one bite. I'm sure the recipe is good I just must have made an terrible mistake somewhere. :P
Very tasty! I added the ginger as suggested, subbed allspice for the cloves (it's what I had on hand) and sprinkled the top with brown sugar before baking which turned out very yummy. I was going to add nuts and forgot, but I'll definitely be making it again so next time!
