Apple Enchiladas

What you need: 

8 soft taco size tortillas
2 cans apple pie filling
2 sticks margarine (Willow Run recommended)
1 cup unrefined sugar
1 teaspoon cinnamon

What you do: 

Preheat oven to 350 degrees. Put 1/4 of a can of apple pie filling on each tortilla and wrap tightly. Place filled tortillas in a 9 x 13 glass baking dish.
Melt margarine over medium heat. Add vegan sugar and cinnamon. Simmer, stirring, until vegan sugar is completely dissolved...no granules remaining.
Pour evenly over tortillas. Bake for 30 minutes, until edges are lightly brown and beginning to crisp.
Great for breakfast or dessert!

SO HOW'D IT GO?

These were yummy! I used Earth Balance instead of Willow Run, and I used brown sugar instead of unrefined sugar.

I also made my own apple pie filling.

Thanks for the recipe! These made me enjoy the morning more than usual.

Mine turned out kinda raw and burnt at the same time. I had to through them out.  :-\
