Almond-Vanilla Brown Rice Pudding

What you need: 

1 cup cooked, short-grain brown rice
1/2 cup Almond Amasake
2 tablespoons raisins (optional)
1/4 cup almonds, chopped into small pieces
small pinch of sea salt
1/8 teaspoon pure vanilla extract

What you do: 

Put the brown rice and the amasake in a small saucepan, and bring to a light simmer over medium-low heat. Add the raisins and salt, and simmer for at least 20 minutes (the longer the better!), stirring occasionally so it doesn't stick. When you're ready to eat it, add the almonds and vanilla, and stir to heat the almonds through. Serve immediately.
The longer you let it simmer, the creamier it gets!! Yummy, hearty, healthy dessert!!
