Absolutely Easy Vegetable Pie

What you need: 

1 (15 ounce) can mixed vegetables
1 (15 ounce) can hominy
1 (4 ounce) can chopped mushrooms
1 (14 ounce) can green beans
2 (10 1/2 ounce) cans of vegan cream of mushroom soup
2 cloves garlic, minced
1 teaspoon lemon pepper
1 teaspoon basil
1 teaspoon oregano
salt and black pepper, to taste
1 cup vegan shredded cheddar cheese
1 (16 ounce) bag frozen tater tots

What you do: 

1. Preheat oven to 375 degrees F. Mix the vegetables, hominy, green beens, mushrooms, and cream of mushroom soup together.
2. Add the garlic and spices to mixture and mix thoroughly. Place mixture in a 8x8" baking dish. Top with cheese.
3. Place tater tots on top of the cheese as close together as possible. Bake until tater tots crisp and brown at the top (about 15-20 minutes).
4. Cut into four 4x4" pieces. Serve hot and enjoy.

SO HOW'D IT GO?

This was a great recipe. Very easy to make, and the ingredients are very versitle.

I followed the recipe and instructions exactly the first time. However, next time I will try using frozen (thawed) or fresh veggies in place of the canned mixed veggies and green beans because the canned veggies contain too much salt for me even after they've been rinsed. This was the first time I've tried hominy, and I love it!

Oh, and I think I added a bit too much pepper for my two-year-old, she kept telling me it was spicy.  :o
Next time I won't add the extra salt and pepper as the recipe states.

I'm a picky eater ;) I just used mushrooms, green beans, cream of mushroom soup, and tatertots. It was wonderful!  ;D
