1 1/4 cup light vanilla nondairy milk (I use 8th Continent soymilk)
1 1/2 to 3 teaspoons strawberry extract
1 teaspoon instant coffee
1) Heat soymilk in a pan until very hot. Take it off the heat and add in the extract and coffee.
You can top it off with some vegan chocolate shavings or whipped cream, and dip cookies or biscotti into it.
