250g traditional rolled oats
150g slivered almonds (or chopped raw almonds)
100g sunflower seeds
100g sun-dried sultanas
2 apples, grated with skin left on
juice of 3 lemons
1-2 tablespoon barley malt or rice malt or maple syrup
1. Mix all ingredients together and leave to soak overnight in a covered container. Will keep for a week.
2. To serve, scoop out a cupful (it is filling so start small!) and fold sliced fruit through. If you like, dollop some soy yoghurt on top.
Soooooo goooood! Also excellent as a mid-afternoon snack if you have sugar crashes.
