1 pound pasta (ruffles, rotini, wagon wheels or elbows)
2 cups fresh or frozen peas
1-2 red bell peppers, diced small
8 ounces seitan, diced small
1 (8 ounce) bottle goddess dressing (I use Annie's)
1. Cook the pasta until al dente, according to package directions. Rinse in cold water, and let drain.
2. While pasta is cooking, steam the peas until tender; rinse in cold water to stop cooking.
3. Combine all the ingredients together, and stir until nicely mingled. Serve chilled, or at room temperature.
This is superb potluck fare! Beware: One taste, and you'll be hooked!
