Cocoa Banana Muffins
2 1/2 cups all-purpose flour
3/4 cup sugar
1 1/2 teaspoons baking soda
1 teaspoon baking powder
1/3 cup cocoa powder
2 tablespoons vegetable oil
1/4 cup unsweetened applesauce
1/3 cup nondairy milk
1 teaspoon vanilla extract
1 tablespoon vinegar (preferably balsamic)
1 cup water
1 banana, chopped finely
3/4 cup chocolate chips
1/2 cup chopped nuts, preferably walnuts and/or pecans, optional
1. Preheat oven to 350 degrees F. Grease a muffin pan. In a large bowl, combine flour, sugar, baking soda, baking powder, and cocoa.
2. In a smaller bowl, combine oil, applesauce, vanilla extract, milk, and vinegar. Pour the wet ingredients on top of the dry, and add the water.
3. Mix until barely combined, and then fold in the banana, chocolate chips, and nuts. Mix well, and pour into a prepared muffin pan.
4. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

SO HOW'D IT GO?
This recipe is AMAZING. The first time I made it, I was out of soy milk and had to use regular (I guess I threw my ovo-vegetarian ways out the window awhile back, sigh) and it tasted excellent. I'm making some for my English class to prove that vegan food can still be yummy, and I'm going to use chocolate soy milk!
