Raw Holiday Cashew Cheese Spread
2 1/2 cups raw cashews, soaked
2 teaspoons brown rice miso (I use GenMai miso)
3/4 teaspoon sea salt
2 1/2 teaspoons lemon juice
3 tablespoons water
red pepper, chopped, to taste
parsley, chopped, to taste
green onion, chopped, to taste
1. Process cashews until smooth paste forms. Add in all other ingredients (except vegetables). Process until smooth.
2. Scoop into a bowl and cover with a towel or plastic wrap. Let sit in a warm place for 12-24 hours so the miso can ferment the cheese.
3. Then mix in veggies/herbs. Serve with crackers or cut up vegetables.
Source of recipe: Seriously, this is the best raw vegan cheese on the planet. OMG. My whole family was reveling in its cheesy goodness. Even my stepbrother who lives on McDonalds was astounded by how similar it was to real cheese! I couldn't believe it! If you want to impress non vegans with vegan food make this spread. I made this for our Christmas Eve dinner, but now that Christmas is over though you can change the add ins to whatever you like, something less festive looking, unless you're a fan of red and green.

I made this a few years ago and it blew my mind. It is honestly the best cheese I've ever had. You cannot buy a vegan cheese spread even close to this. I am so happy I found this recipe again, I'm going to make it this weekend and probably eat all of it.
I can only get minute miso here which is what I used and it was just the most amazing thing I've ever tasted. If you're thinking about making this recipe, DO IT. Your tastebuds will thank you.
Try mixing in some chopped sun dried tomatoes, that is really yummy too.Recently i went to ctfinebistro and they served really mouth watering gluten free dishes. Holy Cheeze Ball! I made this with my crappy food processor so it was a bit chunky, but the flavors WOW! had last minute company show up, they are vegetarian and love their cheese, but they totally dug this. i didn't add the last 3 ingredients out of laziness and just wanting to try it on its own. taking the rest to the inlaws tomorrow. (the only reason for left overs is b/c we ran out of crackers). great recipe, needs more reviews!!

I regularly make a cashew cheese that I love, but I'm happy that this one doesn't include garlic. The taste is remarkably cheesy, kind of like a port cheese dip, and dare I say, BETTER than my old standby. It made way too much for one person so next time will halve the recipe, or else I WILL eat it all in a matter of days. (I left out the parsley.)
This is replacing my standard cashew cheese recipe. It is absolutely amazing.
This recipe is amazing! Subbed dill for the parsley and added a couple cloves of garlic. Perfect for dipping veggies. ;)b
