Warm Chickpea Salad
What you need:
1 onion, diced
1 teaspoon untoasted sesame oil or olive oil
1" piece ginger, minced
1 cup green peas, fresh or frozen
1 (14 ounce) can chickpeas
1 tablespoon tamari or soy sauce
1 large bunch bok choy, chopped
What you do:
1. Heat a large pan to medium-high and saute the onion in the sesame oil.
2. Add the ginger once the onion has softened, and allow it to soften for a milder flavor.
3. Add the peas and the cooked chickpeas, then the tamari and stir to combine everything.
4. Add the bok choy and stir to allow it to wilt with the heat and the steam.

SO HOW'D IT GO?
I would give this recipe 5 stars if I could for some reason I can not rate recipe on this site. I tweaked it by using one can of chick peas and one can of black beans.(only because I was missing a can) I would give this five stars because even my super picky 6 and 13 year old ate this. I spiced my own dish up with sirachi but my two kids hate anything exciting. It was voted 2 thumbs up for 4/5 of us and 1 thumb for my daughter. Certainly a keeper.

Had this a while ago. When it was fresh it was good. The leftovers next day didn't reheat as well as I would have hoped.
This was pretty good and super easy to make. Adding a little salt and pepper helps. I'll probably make it again some time. :)
