Finger-lickin' good cookies!
1 banana
1 tablespoon ground flax
2-3 tablespoons water
1/2 cup margarine
1/4 cup peanut butter
1/2 cup raw cane sugar
1/2 cup brown sugar
1 cup flour (can use 1/2 white flour and 1/2 whole wheat)
1 cup whole oats
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup chocolate chips (or mix of chocolate chips + raisin)
1. Preheat oven to 350 degrees F. Grease cookie sheet. Mix flax with water. Grab a potato masher and start mashing the banana, flax egg replacer, margarine, peanut butter, and sugars until nice and creamy.
2. Add dry ingredients (except chocolate chips/raisins) directly on top. Start to mix, and then add chocolate chips/raisins, mix some more, but don't overmix. Drop by tablespoonful on oiled pan and place in oven for 10 to 15 minutes.
3. They are ready when they start to show a little golden love around the base. They'll harden up on the pans after you take them out of the oven. Leave them on the pan on wire racks for a while to cool a bit.
