Overstuffed Health Burrito
1/2 cup cooked black or red beans
1 jalapeno pepper, finely diced
1 handful cherry tomatoes, diced
1 flour tortilla, warmed
1 vegan vegetable burger patty (I like Dr. Praeger's California Veggie Burger)
1 lime
1 handful fresh baby spinach
1. Combine beans, jalapeno, and tomatoes in microwave proof dish. Warm in microwave for approximately 30 seconds. Spoon bean/jalapeno/tomato mixture into center of warmed tortilla.
2. Thaw the vegetable burger in microwave. Chop burger into small sections, pile onto beans in center of tortilla.
3. Add fresh spinach, and drizzle lime juice. Wrap burrito tightly (it will be overstuffed!) Enjoy!
