Spinach Hummus

What you need: 

1 clove garlic
2 to 3 cups spinach
1/2 lemon, juiced
2 to 4 tablespoons raw tahini
olive oil, as needed

What you do: 

1. Place garlic and spinach in food processor and process until minced finely.
2. Add lemon juice and tahini and blend until the consistency of hummus.
3. You can add olive oil if needed, but the spinach and tahini should be enough.
I love hummus but am avoiding beans. This tastes pretty much exactly like hummus, only better because its chock full of spinach!

SO HOW'D IT GO?

I have an overabundance of mountain spinach (red orick) and kale in my garden so I used those instead of regular spinach. Well, it turned out pretty good actually- I think it had too much lemon because of the bitterness of the kale, so next time I will sub some lemon juice for water if I make it like this again. Also, added a handful of cumin seeds and parsley. I wouldnt overeat it like I do chickpea hummus (which may be a good thing!?!) and it would be as a sandwich spread.

I loveeeeddd this recipe! I had my doubts as to how it would taste, to be truthful, but in the end it exceeded even store-bought standard hummus. Bravo!
