Pumpkin Cake Chocolate Chip Cookies
1 cup pumpkin puree
1 cup vegan sugar
1/2 cup oil
1-2 teaspoons vanilla
substitute for 1 egg (I use 1 tablespoon flax seed oil + 3 tablespoons water) (http://vegweb.com/index.php?topic=7678.0)
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
2 teaspoons baking powder
1/2 teaspoon nutmeg, optional
1 1/2 teaspoons cinnamon
1 cup chocolate chips
1. Preheat oven to 350 degrees Fahrenheit. Lightly grease a cookie sheet. Combine pumpkin, sugar, oil, vanilla, and egg in one bowl. Flour, salt, baking soda, baking powder, nutmeg (if using), and cinnamon in another bowl.
2. Mix together and add chocolate chips. Scoop out cookies onto prepared sheet. (these cookies do not melt down and spread out, instead they puff up and get nice and fluffy)
3. Bake for 10 minutes then let cool.

SO HOW'D IT GO?
I just took these little gems out of the oven - and I have already eaten three!
I didn't have any pureed pumpkin, so I substituted with pumpkin pie filling and omitted the sugar. They turned out to be not too sweet with lots of flavour.
My measuring may have been off, but I found the dough to be a little dry - I added a teensy bit of almond milk just to soften it up (about a teaspoon).
They are very fluffy and moist - and I didn't find them crumbly!
These are being added to my 'repeat' pile!

These are fantastic!!! I used applesauce instead of olive oil, and I only used half the sugar it called for, and they were perfect! What a great combination of flavors!!!
They do have more of a cake type texture to them. I don't use olive oil in mine, not sure how that would taste, and I use brown sugar, but the recipe's pretty much the same otherwise.
I shall call these strange creations 'mookies'. The texture was not at all what I would have expected from a cookie recipe (bearing in mind, cookies are a relatively new thing for me). They were too soft and crumbly... perhaps fluffy, like it says... almost as soft as a muffin, but annoyingly fallaparty. Muffin + cookie = mookie. :P
