Spinach Surprise

What you need: 

16 ounces frozen spinach, drained
4 ounces vegan cream cheese, room temperature (I use Tofutti)
1 tablespoon garlic, minced
salt and pepper, to taste
8 vegan crescent rolls

What you do: 

1. Preheat oven to 350 degrees F. Mix drained spinach, cream cheese, garlic, salt and pepper in a mixing bowl.
2. Lay out crescents, 2 together so it forms a rectangle, and press edges together. Spoon 2 to 3 tablespoons spinach mixture in the middle of the crescents.
3. Fold corners to the middle to form a little purse. Pop the spinach surprises in the oven for 12-14 minutes.
4. Cool on a cooling rack for 5 minutes, and enjoy!

Thanks for the recipe. Even though i dont like spinach that much, i guess the recipe will be good enough to give a try. Will sure share my first experience with the spinach. Fingers crossed.

I made this for lunch for my daughter and I. It was great. I added mushrooms, because I had a ton. I just rolled the croissants regularly. We loved it. Will be making it again.
