Easy Cauliflower and Tofu Curry

What you need: 

1 large onion (white or Vidalia)
1/2 head cauliflower
2 lbs extra firm tofu
1-2 cans coconut milk
1/4 cup sweet and sour or sweet chili sauce
1 tablespoon cilantro
2 tablespoons curry powder (or to taste)
2 teaspoons garlic powder (or to taste)
salt and pepper to taste

What you do: 

Cube tofu and sauté (med/high) in a large pot or Dutch oven with oil (I prefer to use extra virgin coconut oil). Let cook at least 10 minutes. While it’s cooking, chop the cauliflower and onion. Add them and about 1/2 cup water for cooking, cover and let cook until veggies are tender, adding more water when necessary to prevent sticking. Then add your seasonings, sauce, and coconut milk. Use 1 can for a lower fat version and 2 for a creamier more decadent version. Let simmer 5 more minutes. Serve over rice or pasta.

This wasn't spectaculor, but still good :) I think something was missing... What? This is the question.

Woah! This is really good!  ;D

I did not have cauliflower so I just used frozen veggies (a blend of green and yellow beans). I used half a can of coconut milk with sweet and sour sauce. Instead of using garlic powder, I cooked two teaspoons of minced garlic for a couple of minutes with the curry powder. Next time I do this recipe, I'm going to add about half a teaspoon or so of Sambal Oelek (chili paste), it's gonna be even more delicious!

i like to add a diced red pepper or green one to this recipe, you can also use light coconut milk  :>
