Super Southwest Pizza
1 package whole wheat pizza dough
corn meal
olive oil
1 garlic clove
green peppers
onion
1 can black beans, drained
1 small can corn, drained
small can of green chiles
1 jar of salsa (use one with lots of chopped veggies)
scallions
fresh cilantro
First and foremost, be sure to follow the directions on the pizza dough package (allow it to reach room temperature, preheat oven, etc). Coat the bottom of a pizza pan with about 1 tablespoon of olive oil and sprinkle on about 2 tablespoon of cornmeal. Then work the dough to the edges of the pan.
You can really use any toppings that you'd like. For my recipe, I recommend that you saute the peppers and onions in olive oil and garlic in a large pan. Then, add in the beans and corn and mix them all up in the pan (this will roast the corn). Spread the salsa evenly on the crust and then cover the pizza with the mix of veggies. Throw some green chiles on for extra flavor. After the pizza is cooked, add some chopped scallions and fresh cilantro to finish it off. Enjoy!

My bad. It's a superb idea! I hardly did it justice. Not on purpose... my pizza base kinda failed. And I shouldn't'a used creamed corn instead of whole kernel. Meh. It's surely given me something to work from again! :)
