This Banana Bread will Change Your Life!
What you need:
1 3/4 cups of self rising flour
2/3 cup of vegan sugar
pinch of baking powder
3 mashed bananas
1/3 cup of vegan margarine
3-4 tablespoons of soymilk
pinch of cornstarch
1/4-1/2 cup of nuts
What you do:
Preheat oven to 350, mix one cup of flour, sugar, baking powder, and cornstarch in medium sized bowl. Add bananas, margarine, and soymilk. Add remaining flour. Mix in nuts and bake for 55-60 minutes in loaf pan.

why does it say vegan sugar? is not all sugar vegan?
This banana bread, in fact, did not change my life.
Standard self-rising flour replacement recipe - for every 1 cup of self-rising flour, mix together:
1 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
For 1-3/4 cups flour, that works out to be:
1 + 3/4 cups flour
1-1/2 + 1-1/12.5 teaspoons + pinch baking powder
3/4 + somewhere between 1/2 and 2/3 teaspoons salt
I didn't have self-rising flour, so I first added:
1-3/4 cups all-purpose flour
2/3 cup sugar
2-1/2 teaspoons baking powder
3/4 teaspoon salt
pinch cornstarch
The muffins weren't dense and moist, like I anticipate banana muffins to be. I think there's too much baking powder. I'd cut it down by 1 teaspoon. Another option would be to mix together two cups worth of self-rising flour and then only use 1-3/4 cups worth of it.
For the second round of additions, I didn't understand the 3 to 4 tablespoons of nondairy milk. At this point, only half of the flour has been added. It's all goop, so I didn't know what consistency I was going for or why I'd add 3 tablespoons instead of 4 tablespoons. My bananas were large, so for moisture, I decided to add 3 tablespoons of nondairy milk.
I made muffins instead of a loaf and baked the muffins for 25 minutes. I think they'd do better being baked for 22 minutes.
