Lovely Green Soup

What you need: 

8 cups filtered water
2 or 3 tablespoons oil (olive or coconut)
1/2 large bunch celery stalks, washed and chopped
1/2 large yellow onion, chopped
1 bunch fresh beautiful kale washed
6 or 7 large cloves crushed garlic (set aside)
1 large sprig fresh fennel or basil or herb of choice
herbs of choice(i used about a Tablespoons dried oregano)
salt/pepper
1 14oz can artichoke hearts, quartered and set aside
1 cup lentils ,precooked
3 handfuls noodles (your choice~i like brown rice spirals)
lemon juice to "garnish"
curry powder (about a tablespoon or to taste)

What you do: 

Bring water to a boil.
Add the oil, celery, onion, dash of salt, and your herbs of choice.
Tear kale leaves off of stalks and add them to the boiling water. Reduce heat and simmer for about 20 minutes.
Now you can add the garlic and the artichoke hearts and allow to simmer for a few more minutes.
Remove from heat, and scoop the solids into a food processor using a large slotted spoon. Puree the solids and pour the puree back into the broth.
Return to med heat, stir well adding the lentils and noodles, salt and curry to taste. Cook until the noodles are al dente... feel free to experiment with the flavor of this soup...as I have over the years.

SO HOW'D IT GO?

Wow... I printed this recipe out to try about... 4 years ago... and I finally tried it. I'm a real soup lover - but it just seems like I come across a lot of mediocre soups... this soup is NOT mediocre... it's awesome! Really Excellent.

Now, the author says to 'experiment with the flavor' and I have. I've made a few minor adjustments like I added some bouillon cubes, used spinach in place of kale and I used quinoa in place of noodles... um, oh yeah, I didn't use artichokes, I used zucchini instead - fresh zucchini and just added in along with the celery and onions...

can I just say - this soup is awesome... it's even earned a place in my personal family favorite cookbook... which so few recipes make it there... i even blogged about it - it's really so good, it's a shame more people haven't tried it - i love it!

This looks like I want to eat it! I just need to get some kale and garlic so that it can be made!
