Blender Pancakes
What you need:
1/2 cup toasted oats (reg. will do as well)
1/2 spelt flour
1/2 corn meal
1 teaspoon baking powder
1 tablespoon maple syrup
1 1/2 cups vanilla soy milk
2 tablespoons apple sauce
1/2 teaspoon salt
Optional:
1/2 cup nuts OR 1/2 fruit
What you do:
In the blender, blend the oats until they are a flour (yes, you could just use oat flour if you have it on hand).
With blender off, add the rest of the ingredients, blend well.
LET STAND A FEW MINUTES.
(The batter will be runny, but once it sits for 5 minutes, it will thicken right up)
Add batter to hot skillet (I use cast iron with a bit of oil) 1/4 cup per cake, and flip over when the surface it all bubbles. Cook another few minutes, and enjoy!

SO HOW'D IT GO?
I'm thinking of trying this with quinoa flour instead of the spelt (cuz that's what's in my pantry). Think it will work?
These were good. I used whole wheat pastry flour in place of the spelt, and added three tablespoons of peanut butter to the batter (there was a PB craving going on). The pancakes had a dense texture, not fluffy at all. Maybe next time I'd double the baking powder and see if that helps. But overall, very tasty and so easy!
This was a really easy recipe, even with multiple flours. I used wheat for the spelt and coconut milk for the soy and flax for the apple sauce, all out of necessity, but the cornmeal and oats added a really nice texture. Also, I added açaí puree and made a cranberry-strawberry-raspberry syrup for the holiday. Great recipe! I will make this again!
I did find letting it sit a bit over 10 minutes improved the texture greatly, as well.
Thought I'd mention that these also make yummy waffles. Healthy and low fat.
