Low Fat, Low Calorie, High Protein Pancakes
What you need:
1 cup whole wheat flour
1 cup oats
2 1/2 cups light soy milk
1 tablespoon Smart Balance light buttery spread, melted
1/2 cup wheat gluten
1 tablespoon EnerG Egg replacer
2 to 3 tablespoons hot water
1 tablespoon baking powder
1 tablespoon apple pie spice (optional)
1 tablespoon vanilla (optional)
1 tablespoon Stevia (optional)
What you do:
Combine all dry ingredients, Smart Balance and soy milk in fairly large bowl.
Separately add 2 to 3 tablespoons hot water with EnerG egg replacer and mix.
Add replacer to other ingredients in large bowl and fold together.
Pour 1/4 cup mix into pan for each pancake. Cook on medium heat until golden brown.
Nutrional Information Per Pancake Fat: 0.8 grams Protein: 5 Grams Carbs: 5 Grams Calories: 48.5

The title of this recipe lured me in. Pancakes that are low fat AND low calorie!? I'll be making some of these this weekend. Thanks for sharing.
