My Super Secret Tofu Sandwiches (Hot and Spicy!)
2 blocks firm tofu (I buy mine from an open bin in the Asian grocery, but make sure its
fresh)
2 tablespoons Vietnamese ground red chili paste (I use Delicious Hot)
3 teaspoons Sri Rarcha chili sauce
2-3 cloves garlic crushed and chopped
3-4 pieces dried mango chopped (optional)
1 bunch fresh cilantro chopped or torn
1 bunch fresh mint
1 bunch fresh Vietnamese basil
vegetarian soy sauce
5 baguettes
vegan margarine
garlic powder
vegan mayonnaise
lime juice
grated carrots
grated ginger
Chinese bean sprouts
Several hours before hand:Filet tofu into a large bowl, cover with soy sauce, add Sri Rarcha and Crushed red chili paste along with mango, garlic, and cilantro. Try adding red onion for an extra kick! Mix ingredients well and allow to sit in a cool place until meal prep time. The longer it sits, the more the tofu will absorb the marinade.
When it comes time to cook, heat a little oil in a large frying Pan. Cook the tofu with marinade, stirring occasionally, until most all the marinade has dissipated and the tofu is very moist and slightly brown.
Meanwhile, open the baguettes lengthwise. Spread them lovingly with vegan margarine and sprinkle with garlic powder. Then toast them in the oven until golden brown.
Spread each baguette with vegan mayonnaise. Pile the baguettes high with fresh herbs, bean sprouts, grated carrots, grated ginger, hot sauce, lime juice, and of course tofu!
Enjoy while watching zombie movies with your best friends.

To cut it into fillets just slice it into block into thick slices...think of fish fillets or chicken cutlets.

I am new to tofu and wondered how to tell if it's fresh? Also how do you "fillet" tofu? Inquiring minds...
