Lisa's Chocolate Cake

What you need: 

1 cup sugar
1 1/2 cups flour
1 teaspoon baking soda
1/3 cup cocoa
1/2 cup oil
1 cup cold water
2 teaspoons vanilla
1/2 teaspoon salt
2 tablespoons vinegar

What you do: 

This recipe comes from my mother's friend, and I didn't even have to veganize it! Its probably THE most moist cake I've ever had.
Mix first eight (all but vinegar) ingredients well.
Add the 2 tablespoons vinegar and mix quickly until mixed well.
Bake for 25 minutes at 375 degrees Fahrenheit.

SO HOW'D IT GO?

This cake is yummy but it crumbled badly when I took it out of the pan (even though the pan was very well oiled). I tried to make it into two layers, so I'm thinking I should have doubled the recipe to make the layers thick enough. Next time I'll either try it with cupcakes, or just in one pan with parchment underneath so it doesn't stick. It is a delicious, moist cake though, and we're definitely still eating it (with peanut butter icing!) even though it doesn't look too pretty!

I just made this for the second time and it just couldn't be better or easier.  It's very moist and flavorful.  It doesn't even need frosting.

I think this recipe must have been in a popular cookbook a while ago, and has been passed on between friends and relatives ever since. I have this same recipe in my collection as "Kirsten's Grandma's Cake", and I know Kirsten's Grandma has been making it for 50 years. It's a great recipe, no matter what you call it. I would even venture to call it a classic.

As per the grandma instructions, I do the whole thing in a non-stick springform cake pan, mixing and all--you can make a cake without leaving any dirty bowls to clean up afterward.

I made these yesterday and, with a lack of vinegar, subed banana for it and I think it added a great subtle flavor. I also ground up about a teaspoon of instant coffe grounds, just to experiment and the background flavors were really nice. I simply spread peanut butter on their tops. My nonvegan friend loved them.

Great, easy, fast recipe for a really moist cupcake. I'll definitely use it again.

Great recipe. I used 1 c. flour + 1/2 c whole wheat flour and added a pinch of flax seed meal. They came out so light, fluffy and moist. Actually too light and fluffy for my taste! Next time I will try 1/3 c applesauce and 2T of oil instead of the oil maybe that will dense it up a bit? got 11 cupcakes
