CheeZie-E and the Scrambles Crew
1/2 block of firm tofu (8 0z.)
1 small/medium onion (diced)
1 medium tomato (diced)
1 tablespoon turmeric
1 tablespoon garlic powder/onion powder (your preference)
1 teaspoon sea salt
2 tablespoons vegetable oil
1 teaspoon black pepper
1/4 cup shredded vegan cheese (Follow Your Heart Cheddar/Nacho is best)
Mash up the tofu using a fork or potato-masher.
Dice up the veggies.
Then, in a medium skillet, add the tofu, tomato, onion and oil. Mix together and begin cooking on medium heat.
After a few minutes you should have a good sizzle going, at this time you can add all of your spices. Stir regularly and continue cooking on medium heat for about another 5-8 minutes.
Lower heat and stir in shredded vegan cheese. The cheese should melt in quite successfully within a couple of minutes.
Very good with ketchup or salsa. Hope you enjoy.
