Goddess Pasta & Seitan Salad
What you need:
1 pound pasta (ruffles, rotini, wagon wheels or elbows)
2 cups fresh or frozen peas
1-2 red bell peppers, diced small
8 ounces seitan, diced small
1 (8 ounce) bottle goddess dressing (I use Annie's)
What you do:
1. Cook the pasta until al dente, according to package directions. Rinse in cold water, and let drain.
2. While pasta is cooking, steam the peas until tender; rinse in cold water to stop cooking.
3. Combine all the ingredients together, and stir until nicely mingled. Serve chilled, or at room temperature.
This is superb potluck fare! Beware: One taste, and you'll be hooked!

SO HOW'D IT GO?
This had a really classic pasta salad look and feel. I was pretty surprised at how little dressing there seemed to be after using an entire bottle of annies, but it had the perfect coating to still be able enjoy the flavor contributions of each ingredient!
This is good.. I've made it several times since coming accross this recipe. My favorite variations are:
I added fresh garden tomatoes, and subbed chickpeas for seitan. (one can of chickpeas is the perfect amount)

hey, i wonder if i could use baked tofu instead of seitan? seitan looks too much like meat and it's scary looking (although it is tasty), and since i am bringing it to a non-veggie potluck, i really want to try to introduce them to something non-meat looking, easier to make (baking tofu vs making seitan from scratch with gluten floor), and cheaper.
any idea?
if not, i guess i would have to try it out first.
I haven't made this (yet), but I want to thank the other posters on here for introducing me to Goddess dressing. OHMYGOD!!! It is our new favorite thing -- we are having salads right and left and buying bottle after bottle. Thanks for showing me the light! :-)
This recipe lends itself to loads of variations. I made a simple version a couple nights ago using angelhair pasta, tomatoes, avocados, red onion, sunflower seeds, kalamata olives, and, of course, Annie's Goddess Dressing. Mmmm...delicious! P.S.--I was at the health food store yesterday, and I did see the two different Annie's Dressings; one just said "Goddess" while the other said "Green Goddess" so make sure to get the "Goddess" one as it's vegan. Also, the ingredients are totally different and would have much different flavors. Both versions are listed on the company website, www.anniesnaturals.com.
I just made this, and honestly, it'll probably be gone before my husband gets home for dinner. I used peas, fresh spinach, broccoli, bell peppers (red, yellow and green) and a handful of sunflower seeds ---- wonderful!
