Tofurkey Sausages with Gravy
3 Tofurkey sausages, sundried tomato flavor
3 oil packed sundried tomatoes
1/2 onion thinly chopped
1-3 garlic cloves chopped, based on preference
5-7 leaves fresh basil
1 cup vegetarian broth
2 tablespoon flour
olive oil
salt and pepper to taste
chili flakes if desired
1/2 teaspoon sugar to help caramelize onions faster, if needed
1 tablespoon dijon mustard
1 tablespoon balsamic vinegar
Thinly dice onion and fry it on medium in saute pan with a little olive oil (1 tsp). Add the vegan sugar if you are in a hurry and don't want to wait long for the onions to caramelize.
Add dash of black pepper and chili flakes to taste, if desired.
After a few minutes, add in garlic and diced sundried tomatoes. Saute for a few minutes then add the balsamic and let reduce.
Meanwhile, take the flour and mix in with a little water or broth to form a thick liquid. Add a little at a time to the pan and let it boil. At this point you might want to add salt unless the broth you are using has enough.
After it boils for a minute or two add the vegetable broth and stir. Add dijon mustard and basil. Stir. Put sausages in the liquid so that they heat through and get some of the gravy flavor on them.
Put a lid on the pan for a minute or two. Remove lid and let reduce to a thick and creamy consistency. May need more broth.
Serve. I like this with roasted potatoes.
