Spinach Pie
1 cup warm water
1 tablespoon sugar
1 tablespoon salt
1 tablespoon yeast
1 tablespoon olive oil
1 onion, chopped
2 tablespoons olive oil
1" piece ginger root, chopped finely
2 cloves garlic, chopped finely
1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
1/2 tablespoon salt
1/4 tablespoon pepper
1. Preheat oven to 400 degrees F. Make vegan bread dough with first 5 ingredients (through olive oil). Let rest while you prepare the vegetables. 2. In 2 tablespoons olive oil, saute the onion, adding garlic and ginger. Add remaining seasonings with spinach and stir well.
3. Divide the vegan bread dough into 4 pieces, and roll each piece flat. Spoon 1/4 of spinach mixture onto dough and fold dough over to enclose the mixture, crimping or pressing the edges together.
4. Prick top a few times, and assemble the other 3 pies. Cover with cellophane or spritz with oil. These can be left to rise or baked right away at for 15-20 minutes.
SO HOW'D IT GO?
I really like these. I think (and most would agree) that there is waaaaaaaaaay too much salt though. I've cut it back to 1/2tsp salt. I also like it better with more stuff inside. I've added red pepper, carrot, and tomato to the inside, you could really put any vegetables though. I add italian seasoning to the dough for more flavour and because it looks nice. I also add cheese to my husbands as well. I also cook them on a pizza stone for extra crispness. Super good!
I loved this recipe, although I did have to change a few of things. I used half the salt it asked for, both for the spinach filling and the bread. I also used 2-1/2 cups whole wheat flour. I also used a bit more garlic, but that's just because I LOVE garlic.
When I ate mine, I used a bit of marinara sauce to dip it in, it was really amazing. I've made this recipe twice already, I make 6 little ones and take one to work a day.

This was delicious :) I used the following modifications:
2 tsp baking powder instead of yeast
about 2 cups flour for dough
1/2 T salt & 1/2 T sugar (in dough)
Few dashes ground ginger instead of fresh
I also pureed some eggplant that I had steamed, to give it a bit of creaminess. The bread turned out very soft and tasted great! It was good to dip in melted butter (well, Earth Balance) But I was wondering, does anyone know how to get these breads to brown? I brushed the pies with soy milk (and I've also tried the margarine) but nothing seems to work. I've been trying to work that out so I can convince my mom to veganize her next apple pie.
