Spicy, Savory Black Beans and Brown Rice
1 bag black beans - soaked over night
1 1/2 cups brown rice
1 veggie cube
3 large cloves of garlic
3 large jalapenos ( or more if you like it spicy )
1 can of diced tomatoes 16 ounce
1 small jar of green olives
veggie oil
salt
1. Boil black beans until soft. Use enough water so that they are fully covered. Keep in pot with water. Set aside on simmer.
2. Heat veggie oil in a pan, toss in 3 chopped garlic cloves, 1 chopped jalapeno, and the rice. Cook and stir until rice is lightly browned. Transfer to pot with beans. (You want to use enough water when cooking the beans so that there is enough left over to cook rice.)
3. Slice green olives and jalapenos, add to pot.
4. Toss in the can of tomatoes and a veggie cube. Stir it up and let it simmer until the rice is cooked (about 45 mins)
Add salt and more jalapenos if needed.
