Ghost Pepper Sweet Potato Hot Sauce

What you need: 

2 Carolina Reaper Peppers
1 Jalapeño Pepper
1 Anaheim Pepper
1 Large Onion
4 Cloves of Garlic
1 Sweet Potato, peeled
2 Medium Carrots
1 Cup Apple Cider Vinegar
2 Tbs. Sea Salt
2-3 Tbs. Lemon or Lime Juice

What you do: 

 ***Carolina Reapors are serious business. Make sure to wear gloves when handling the peppers and make sure not to contaminate yourself or your cooking environment. Be careful not to touch your face, eyes, or other sensitive areas.


Dice carrots and sweet potatoes and boil until soft. Dice peppers, onion, and garlic and fry on low heat until onions become soft, making sure not to brown peppers. In a blender add all ingredients. Begin blending on low, but carefully increase speed until mixture is completely aqueous. Sift out the solids and carefully jar.

 

Variations:

1. Can replace pepper combination with any combination of comparable weight.

2. Sweet potato/carrot combination can be substituted with most any root vegetable.
