Super-Easy Rice Cooker Quinoa with Kale and Cranberries

What you need: 

1/3 cup quinoa, rinsed
2/3 cup water
2 handfuls kale, rinsed and cut
1/3 cup dried cranberries
1 tablespoon olive oil
2 tablespoons orange juice
cinnamon, to taste
salt and pepper, to taste

What you do: 

1. Place quinoa, water, kale, cranberries, olive oil, and orange juice in a rice cooker and turn it on.
2. Stir around a couple times during cooking. I like to stop it before the rice cooker pops (but once all liquid is absorbed) because otherwise I always end up with quinoa caked to the bottom of the pan.
3. Add cinnamon, salt, and pepper to taste. Stir and enjoy!
I just tried this hot, but it would probably be good cold too.

This sounds great--how would you recommend cooking it if you don't have a rice cooker?

I made this morning. It was awesome!!! ;)b
I added a little bit of Agave syrup to it because I like it to be a little sweet.
Yummy! Ill be making this again.

This recipe was fantastic!  I used about 2 cups quinoa to make a large batch.  I did not have orange juice so I used about 2 TBSP of apple juice concentrate.  I also did not add any oil, instead put in 1/4 cup chopped pecans.  I used 3 chopped kale leafs but next time might even add more in.  I also omitted the cinnamon.  It was so yummy - I will try and get a pic up if I don't eat it all first  ^-^
