Whole Wheat Banana Pancakes

What you need: 

1 very ripe organic banana
1/2 cup vanilla soy milk
1/2 cup organic whole wheat flour
1 tablespoon organic applesauce
1 tablespoon baking powder
1/2 tablespoon organic sugar
1 teaspoon vanilla extract
pinch of salt
organic slivered almonds

What you do: 

Mash banana in a bowl, then mix in other ingredients until smooth. I find it is best to mix in either the baking powder or the applesauce last as they have a tendency to foam up if added one right after the other.
Spray a non-stick skillet with olive oil spray and preheat to medium. The pan is ready when sprinkled water sizzles on it. Pour desired amount of batter onto pan and add almonds. Flip when the edges are bubbly and the other side is golden brown. I love to top these with vegan butter and pure vegan maple syrup.

This was ridiculously delicious and by far the most moist whole-wheat food I've ever tried. I doubled the recipe and also used 1/3 cup of applesauce instead of the 2 tablespoons, replaced agave nectar for the sugar, and substituted 1/2 frozen blueberries for the slivered almonds. Thanks for a wonderful recipe!  :)>>>

i've had these pancakes  for 4 days in a row and LOVE them, i replace 2tablespoons of ww flour with flax seed meal and add cinnamon (and a little extra sugar).. yummy

First time reviewer, long time baker.

I made these today.
They didn't quite have a pancakey texture, but man, were they tasty.
Better than any pancake I've ever tasted.
And perfect vegan cooking for one.

I would definetly make these again.
