Warm Potato Salad

What you need: 

2 fat potatoes
2 big carrots
1 medium or large onion
1 to 2 cups fresh spinach leaves
1/4 cup of olive oil (approximately)
2 tablespoons nutritional yeast
2 tablespoons lemon juice
salt and fresh ground pepper to taste

What you do: 

Cut vegetables into chunks. Boil until soft (but not the spinach, save that). Take out of water, put in a bowl, add spinach leaves. Put other ingredients over vegetables. Mix. Thats it. It is tres good.
PS:. you could add whatever other vegetables interest you. For the non vegetable ingredients, add more or less to your taste.
