Very Simple Blueberry Muffins

What you need: 

1 1/2 cups flour
1/2 cup sugar
2 teaspoons baking powder
1 teaspoon salt
3/4 cup nondairy milk
1/4 cup vegetable oil
1 cup frozen blueberries

What you do: 

1. Preheat oven to 400 degrees F. Place baking cups in a muffin pan.
2. In a mixing bowl, combine flour, sugar, baking powder, and salt. Stir in nondairy milk and oil.
3. Fold in blueberries. Pour into baking cups and bake for 25 to 30 minutes.

SO HOW'D IT GO?

These are absolutely delicious! I made a batch using a 4 berry blend ( blueberries, strawberries, raspberries, and blackberries) and I put a sprinkle of organic cane sugar on top as they were cooling. Yummmmmy!!!

They freeze wonderfully too. Thanks for this recipe!  :D

Good basic recipe! I took someone's advice and subbed half the flour for oats and added some vanilla extract. Threw it together, baked them for just a little longer than half an hour and they peeled off the silicone liners very easily. The recipe made eight exactly as stated. Nice!

;)b SO Yummy! Used whole wheat pastry flour, applesauce instead of oil and turbinado. Also sprinkled about 1 tablespoon of turbinado across the tops before baking. I can't wait to try this base with other kinds of fruit. I had to stick the extras in the freezer so I didn't eat them all in one sitting.

Even my non-vegan friends adore it, and when they ask me to make some (And they often do!) and I'm out of soymilk or blueberries, I just pop in some chocolate chips (or carob chips, if I have them on hand) and use regular milk, so the non-vegan folk can eat them, even if I can't.
I will say though, there are a ton of blueberries loaded into the muffins, so be weary of people who don't really like them to begin with  :)

oh and I wanted to add that I'm going to try this recipe again in the near future using strawberries, and some with vegan chocolate chips! can't wait!

these were really good!  I didn't have any problems making them, totally easy like it says!  I may have added just a wee bit too many blueberries, and I used fresh ones instead of frozen.

Still really good, and my mom loved them!

I sprinkled cinnamon on top before baking them :)

These are so good. Very easy to make. I used fresh blueberries & in a senior moment I forgot to add salt. They were still delicious. Very soft & high like a gourmet muffin. My omni friends loved them.

It was very yummie. I made them into lemon blueberry muffins. I added a tsp of lemon juice into the soymilk and 1 tbsp of lemon zest. It was delicious but it didn't rise so much so next time I'd put baking soda.

I also made a batch after that using all whole wheat flour and they tasted fantastic I added in 1/4 tsp baking soda and half a tsp more lemon juice and they were great. They were not dense at all. Very fluffy and had a nice crumb like texture but they didnt crumble and fall apart. Yums

These are delicious and really did only take about five minutes to make.  I love "chopping" blueberry muffins into a bowl of vanilla Coconut Bliss (non-dairy ice "cream" made out of coconut milk and agave syrup), and these muffins worked perfectly.
