Pumpkin Apple Whole Wheat Muffins

What you need: 

2 cups whole wheat flour
1/2 tea salt
2 tea baking powder
1/2 can pumpkin
1 apple
1/4 cup raisins
1/2 cup apple sauce
1/2 cup agave syrup
1/2 cup soy milk
1 tablesppon cinnamon
1/2 tea ginger
1/2 tea pumpkin pie spice

What you do: 

Add the dry ingredients in a large bowl. (flour, salt, baking powder, and spices) mix well. In a second bowl combine remainder of ingredients (apple sauce, honey, soy milk, pumpkin) and mix. Dice up apple in small chunks, add to bowl. Combine ingredients, possibly adding more soy milk if dough is a little dry. Fill 12 muffin cups cook at 350 degrees for 30 min.

SO HOW'D IT GO?

I made these as jumbo muffins (I got 8), same cook time. I think they're pretty tasty- I slice them in half and put a little EB on each side. they've got a real fall-like flavor to them. not bad!

these got better the next day.  my husband says these are his favorite muffins...  I will definitely be making these again.

these turned out well, but not one of my favorite muffin recipes... not quite sweet enough for me and definitely "healthy" tasting (which they are). i had no apple but otherwise followed the recipe.  my husband liked them. they go well with earth balance. :)
