Traditional Spanish Lentils
1 medium onion, diced
2-3 cloves garlic, mashed
3 tablespoons olive oil
2 cups dried green lentils
1 medium tomato, diced
2 medium carrots, chopped
1 large potato, diced
1 bay leaf
1/2 teaspoon cumin powder
salt and pepper, to taste
4 cups vegetable broth
1 teaspoon sweet paprika
hot sauce, optional, to taste (I use Tabasco)
1-2 links vegan chorizo, optional (I use Soyrizo)
1. In deep pot, sauté onion and garlic in oil until it starts to color.
2. Add remaining ingredients, except hot sauce and chorizo, and bring to a boil.
3. Reduce to a simmer and cook until lentils are done--about 30 minutes.
4. If you like, you can add a little hot sauce. If you use vegan chorizo, take out and cut into rings before serving.
This can of course be made in the crockpot.

I just wasn't a fan of this...but I also may have added the wrong kind of hot sauce. I'm als not a big sausage fan. My boyfriend, however, thought it was delightful.
I'd love to sub butternut squash for the potato. Any idea whether the cut up squash would cook in 30 minutes or not?
Where can I get vegan chorizo??
June 2012. Wow! Super delicious! I really loved the flavor! I am definitely making this again! I have gone on to recommend this recipe to others. Very easy. Very versatile. The "sausage" is a must to round out the dish and make it a main course. Without the "meat" it becomes a great side dish. Try it today! You will love it!
I love this recipe! I always make it in my crockpot, but I saute the onion and garlic first. I made this for my girlfriend for the first time last week and she absolutely loved it! It is even better as leftovers after it has sat in the refrigerator for a day or two.

I thought this was super tasty. Easy too. I used only 1.5 cups of lentils and heaping measurements for the spices. I'm not usually a fan of mock meats, but the chorizo was really good in this (I used Trader Joe's brand). I pan fried it, and then added to individual portions as desired. My toddler ate two (toddler-sized) portions!
Omgosh! This was an incredibly simple recipe. The only time consuming part is the chopping and I like to almost double a lot of the veggies just to get that veggie goodness going :) I did use only two cups of veggie broth and 3 more of water. Worked wonderfully for me because I can't have high sodium and soyrizo is high in sodium.
It was delicious to eat right after it was done but it was EVEN BETTER as left-over recreated.
Today I made a giant burrito out of this. I added more onion and a small amount of soyrizo and recooked/heated it with the lentils. Put this with some guacamole in a burrito tortilla and WOWOWOWOW why haven't I had lentil/soyrizo burritos before?! i have no clue.
Delicious. Leaves plenty of leftovers. Freezes well. ;)b

Made this for dinner today and it was great! I added 1t of smoked spanish paprika for a little more smokiness.
